Dilution & Application
For standard 3-sink manual dishwashing, add 1-2 oz of concentrate to a 10-gallon sink of hot water. Use 2 oz per sink for heavy grease loads such as deep fryer baskets, sheet pans, and heavy cookware. Use 1 oz for lighter loads such as glassware, dishes, and utensils. Replenish concentrate and change sink water when suds diminish or water becomes visibly soiled, do not attempt to reactivate spent wash water by adding more concentrate.
Food Service Use Guide
Appropriate equipment and surfaces:
- 3-sink manual dishwashing (wash, rinse, sanitize): Use in the wash sink only. The rinse sink should contain clean hot water. The sanitize sink should contain an approved chemical sanitizer per your local health code. Dish soap is not a sanitizer and does not replace the sanitize step.
- Pots, pans, sheet trays, and cookware: Apply at 2 oz per 10-gallon sink for heavy grease and baked-on food residue from commercial cooking operations.
- Glassware and dishware: Use at 1 oz per 10-gallon sink for standard dishware, glassware, and utensils, lower concentration reduces residue and improves rinse efficiency on glass surfaces.
- Deep fryer baskets and components: Effective on oil and grease residue at 2 oz concentration. Cool fryer components fully before washing and ensure thorough rinsing before returning to service with hot oil.
- Cutting boards and prep surfaces (manual wash only): Appropriate for manual washing of non-porous cutting boards and prep equipment. Follow with an approved sanitizer step per food safety guidelines.
Important food service notes:
- Dish soap is not a sanitizer: This product cleans, it does not sanitize. Commercial food service requires a separate approved sanitizer step (chlorine, quaternary ammonium, or iodine-based) as part of the 3-sink process. Cleaning and sanitizing are two separate steps with separate products.
- Rinse thoroughly before air drying: Rinse all washed items completely in clean hot water before the sanitize step and before air drying. Dish soap residue on food-contact surfaces can affect taste and may present food safety concerns.
- Do not mix with acidic cleaners: While no incompatibles are listed in the SDS, avoid mixing with strongly acidic cleaning products in the same sink or container as this can reduce cleaning effectiveness and alter pH.
